We took out the gas line on purpose.
When Chef Elena Marsh opened Ember & Oak, she made one rule that shaped everything else: no gas. Every plate is cooked over live oak and hardwood embers. It's harder, slower, and impossible to fake, which is exactly the point.
Fire is honest. It rewards a good cut of beef and a vegetable picked at the right time, and it exposes anything you try to hide. So we buy well, keep the menu short, and let the coals do the talking.
Three rules, every night.
Live fire only
Oak and hardwood embers, never gas. If it can't be cooked over fire, it doesn't make the menu.
In season, close to home
We buy from growers and ranchers we can drive to, and cook what's actually ripe that week.
A short menu, done well
Fewer dishes, each one worth ordering. We'd rather do ten things right than thirty things fine.
